Spring is almost here & with that wonderful time of year, there’s an array of seasonal vegetables at hand to prepare in whatever way to suite your pallet. This creation has room for some creative interpretation. For an even healthier choice you can substitute the pasta for wheat pasta. And for a little extra protein – you can add chicken or shrimp which works You can throw in any kind of vegetable you like and make it your own.
